We (Dave, Shannon and Claire Nichols) are a small certified organic cow dairy in Madison, NY. We have been making cheese for 5-years now. We have made the fresh stuff and yogurts, but my love is the raw aged farmstead cheeses. After much thought, we decided that I would focus on raw aged cheeses only.

In 2009, we added dairy goats to our farm. They are not certified organic (yet). My daughter, Claire, and I love them. I started making raw aged goat milk cheeses in 2010. They are just starting to come out of the cave now.

We also have veal from our certified organic cows, goat milk caramel sauce (cajeta), goat milk fudge and other items.

We love to talk about cheese and our animals. Come visit.
